Very happy to know that we have a resident consultant/expert with such a deep background in E89s. I bought mine rather impulsively and because it seemed like a gem but I am still a newbie with BMW and still learning.
Your choice is drop dead gorgeous. Don't think I have seen that color red in the USA. Finding one that has had some wear items replaced is also a bonus.
Your current driving profile for the new car is very much like mine. I don't feel a need to be tempted by more power anymore and the ride in normal is fine with me. Of course I yield to temptation caused by the exhaust burble and pop when conditions are very favorable.
Looking forward to your posts and good fortune with number ten.

The 326s once refurbed will be on Uni Rainsport 3s 225 35 19 + 255 35 19 34psi front - 36psi rear
the Veemanns on MPS 235 35 19 + 255 35 19 34psi front - 36psi rear

I'd be very carefull going 235 35 19 front ... I am on 225 35 19 and experiencing some rubbing when locking the steering wheel to the left ... it is minimal but still ...

Your fronts rub with standard sizes Ben? Don't get that on mine, have you checked your wheel arch liners are fitted properly?

I could have gone MPS both sets but I'm deliberately not doing so as to compare back to back with the Uniroyals which I have ultimate faith in after running them on a variety of vehicles including 340bhp VW Scirocco R .
They aren't intended specifically as "winter" tyres as the car only moves for pleasure purpose .
As for the 326s inevitably cracking ? I think the odds against are in my favour with a softwalled 255 35 tyre wrapped around it + a sympathetic psi of 36 as opposed to minimal sidewall inflated to way over what a 19inch tyre would be on a heavier X5 X6 or 5 series or 7 series

I have recently purchased a low mileage 65 plate 35is which is still on its factory Bridgestone run flats, front 225/35/19 and rears 255/30/19. I am not looking to replace the tyres with non run flats for a while as they have plenty of life left in them. I'm currently on 33psi front 36psi rear on 19inch Bridgestone runflats .
Really cannot wait to get them off , i find the ride , feedback & handling on anything other than smooth dry tarmac truly shocking (6.5mm all round)
Zero compliance or confidence at all in them / quite the opposite with outgoing ZMR on 19inch MPS2s

You won't know how good your 35iS is until you put non-RFTs on it.
(The pressures for both are on the label on the door sill on the driver's side.)
