We worked it out this year, and to get down to the Alps and back up to the Ring you need at least 4 days, thats with plenty of driving each day.
I would say you need a bit longer than that if you are including a Ring trip. 4 days would be absolute bare minimum to get to the Alps and back (and enjoy any of it). You can get to the Alps in a day from here (London for me) as I have done it, but it is knackering. Better to allow two days to get there, or leave one evening after work and break the back of it down to somewhere like Reims and early start the next day.

Insurance is apparently covered by a 'Green Card' that you apply for, which costs 25 quid (told this when I rang my ins company). But you obv need specialist ins on the Ring...if you don't wanna risk it. Which it isn't advised to.
For most a Green Card is included in the policy – you just need to call up and tell the insurance company where you are going and when as they normally only cover Europe and usually it is for a limited number of days (to stop people living out there with a car insured here etc). For the Ring I think you will struggle to get insurance. My track day cover does not cover it, it is seen by insurers as very high risk because it is very high risk. More accidents there than any other track. There is some debate as to whether a standard policy covers it due to the ring being a toll road but to be honest I would not fancy my luck in making a claim. I have span off at the Ring, it is so long it is impossible to learn the track unless you do it many, many times and it is dangerous and demanding. Great experience and even driving it cautiously gets the adrenaline flowing.

Dover to Dunkerque is the cheapest car ferry I believe, I think it's about 100 quid return.
I bought a return from Dover to Calais for £58. Eurotunnel is by far a better way to go though and worth a bit extra as it saves a lot of time and hassle... especially if you are doing it on so few days.

B&B's can be had cheaply around the Ring, but Italy is more expensive (especially Drink :| )
I don't think going to the Ring can be done all that cheaply? Pretty sure I paid over £200 for 2 nights in Sabine's family hotel? Me and the GF that is. The Ring itself is not cheap either.
