The GT cars have on board air jacks built into the car. They just attach an airline and the car goes up.
On some there are extra things to give more height and the small wood blocks are properly there so they do not damage the garage floors.

Yeah - used to work for a company that sponsored cars in the GT challenge series, (they had a Marcos Mantis and Lister Storm, very nice), and had a few fun runs out with the drivers - was even let loose on the road versions. Loved those days
My comment on the wooden blocks is it seems a bit risky, given the weight and cost of those cars, relying on something that can split along a grain line...
