I rarely get on ferries I'm booked on, usually one before or one after that which I'm booked on. Usually no charge for this.
They will put you on the next available boat.
You could book a best guess ferry and just pay a surcharge if way early or way late......pretty small charge as well.
Dover/Calais crossings are very frequent, Dover/Dunkerque not so frequent.

Yes - I have used that a lot when they were going they were great and non of the booze cruises on those.
