I've built a few cobra replicas in the past - from my perspective;
a good one isn't cheap to build - you won't get change from 25k for a decent spec. very easy to spend 40.
they're light, so can be made damn fast - engines can be original style or modern - take your pick. i had one old school motor, the later ones were all LS variants with fuel injection etc. powerful, smooth and relatively economical. i prefer driving to polishing, so newer style suited me.
chassis and suspension - some are just awful, some are engineering excellence - depends on manufacturer, spec, and of course the build quality. they can be damn fine.
fibreglass or carbon fibre, just like TVR. corvette etc, can move. its not uncommon to see movement in the body. a good painter will cure the shells before paint . some are now available in aluminium, and parts are interchangeable with originals, but that gets pricey, (£70k built. )
Some cars come from the mould in gelcoat, which can be finished to be almost indistinguishable from paint, and it is repairable to some degree, you can add gelcoat to stone chips and remove them invisibly (Gardner Douglas wee excellent - i built 3 of those ).
i loved mine, great group of folk that have them, mostly self built by real enthusiasts.
with so many cobs, quality varies hugely, some are replicas of originals which would embarrass production cars in terms of quality, some hot rods, not my thing but the work is undeniable, some are just nasty piles o'shite....
GT40
a real labour of love, more fiddly to build, less parts readily available, most folk take ages and spend way more than they should. GT40 tend to be built as accurate as possible -

Don't think this counts but it's a self build - not quite a 'replica' but one of my favourite looking cars and one I'd love to own and drive . . .

I'm not generally a fan of kit car wannabes - looking in the window of a Countach and seeing a Fiero interior is a bit of a disconnect.
The Factory Five kits are one exception - they do among the best job I've seen. A Daytona coupe would be welcome at my place.
Closest I've come to kits was an early TVR Grantura I raced in vintage (they actually were available as complete kits in the erly 60s, just add drive train) and a 56 MGA I bought that had previously been fitted with a Fiberfab Jamaican body (I later installed a GM V6 and T5 trans). It's been a lot of fun and doesn't look like a kit car IMHO.

There are some replica kits which have been around a long time since 80s, so fit/finish and build is so much better along with better donor cars.
There are a coupke of kits which would still be fantastic but would require a decent engine to really convince the doubters.
A couple of kits which I would definitely consider include ford gt40, lancia stratos, and the ultima gtr which im not sure is still considered a kit.
Would like to have retired and have a nice big garage to play though
Oh, not sure if anyone is doing a porsche 917kit but would love to run a road legal version.

There was a lambo contach replica for sale at the London Classic Car show in February. Blurb said it was registered as a Lambo and had the 5 litre engine. Dealer wanted £40k for it and I have been dreaming about it ever since.

I don't really have a problem with replicas, so long as they aren't made out to be original!
A guy up my road has a replica GT40 that looks fantastic, and sounds amazing too. He was taking it to Le Mans that year and was just fettling it for the trip.
At the end of the day not many people will ever be able to afford an original Cobra or GT40, so if you really want one but don't have the budget I can't see any harm in having a replica, especially when it has the right mechanical bits fitted.
Not a fan of the MR2 Ferrari look-a-likes though.
