Server Time
Is the correct time set on the server as I never really looked at the times on posts before until now... I just realised that my time was 1 hour ahead but when I went into my board settings, everything seemed fine, however to counteract this I have now adjusted my timezone to (-1) which is not correct

You need to check the summertime/Dst box is set to "no"
